What can I do with ten pounds of rye flour (with all this at a time)?
I was given a big bag of bread mix, which listed ingredients are wheat and rye flour, rye soy sauce, salt, wheat gluten. It calls for adding water and yeast.
You can make a lot of Rye bread. Caraway Rye Bread Recipe Ready in:> 2 hrs Difficulty: 3 (1 = easiest:: hardest = 5) Ingredients: 1 cup water PLUS "PLUS" means this ingredient in addition to one on the next line, often with divided uses 3 tablespoons water 2 tablespoons sugar 1 1 / 4 cup white rye, pumpernickel or medium ray flour 2 1 / 4 teaspoons instant yeast 1 / 2 cup sour cream (low fat is fine) 2 tablespoons cumin seeds 1 1 / 2 teaspoon salt 2 cups bread flour 2 tablespoons wheat important gluten or dough enhancer Directions: In a medium-sized mixing bowl, combine water, sugar, yeast and rye flour, mixing to form a thick dough. Let dough rest for 20 min. Add the remaining ingredients, and mix and knead the dough together - by hand, mixer or bread machine - until it was pretty slippery. (Remember, the nature of the rays are sticky dough, so do not be tempted to add too much flour). Put the dough in an oiled bowl, cover, and let to rise until doubled in bulk, about 1 hour. gently deflate the dough, knead it briefly, and the shape of two smooth oval loaves. Put the loaves on a greased or parchment-lined baking sheet, cover them and let them rise until they almost doubled, about 1 hour. Gently slash the tops the loaves in two or three places just before baking. Bake the bread in a preheated 350 F. oven for 35-40 min., or until an instant-read thermometer inserted into the center of reads 190 F. 200 F.
