Mu-Err Mushrooms?
I just bought a package of Mu-Err (Jelly Fungus /Wood Ear) dried mushrooms.
I am used to the fragrant taste of Shii-Ta-Ke (donggu).
But those Mu-err have a slight "moldy" odor, even after soaking. Optically they look perfect, the package as well.
I did not dare cooking them since it smelled a bit suspicious.
Can any one tell me whether or not it is normal and disappears when cooking?
The Mu-err should not smell mouldy. It has a unique fragrant, woody smell before being soaked. It feels dry, crispy & breaks easily.
After soaking, it expands a lot (use a container that holds 5 times the volume of the dried Mu-err). It feels a little slippery after soaking..
After cooking, the Mu-err is very crunchy and has neither taste nor smell. You can use it to fry with vegetable, steam it with chicken, red dates & wolfberry and a lot more delicious dishes.
